Banana cupcakes and icing



I found this on another blog and the were so good.
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter melted, 1 stick
3/4 cup sugar
2 large eggs
1 1/2 cups bananas, mashed (about 4)
1/2 tsp vanilla

Preheat oven to 350 and line cupcake tray with wrappers. Combine the flour, baking soda, baking powder, and salt in a small bowl. In the main mixing bowl, blend together the butter and sugar. Add the eggs and mix well. Add the bananas and vanilla. Mix int he dry ingredients. The batter will be a little thiner than usual but it will be ok in the end.

Fill cupcake liners about 3/4 full. Bake at 350 for 20-25 minutes or until the tops turn golden and a toothpick comes out clean. Place on a rack to cool.

Honey cinnamon Frosting
1/2 cup butter, room temperature
1.5-2 cups powder sugar
1 Tbsp honey
1/4 tsp cinnamon

Mix all ingredients together, with more or less sugar for taste and consistency.

Canadian Living's best chocolate chip cookies

So I needed some cookies for our VBS. These turned out really well. They were also flat too. Sorry no picture for this one.

Ingredients

* 1/2 cup butter
* 1/2 cup shortening
* 1 cup granulated sugar
* 1/2 cup brown sugar, packed
* 2 large eggs
* 2 teaspoons vanilla
* 2 cups all-purpose flour (for a firmer cookies, add about 1/4 cup more flour)
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 2 cups chocolate chips (I used mini chips)
* 1 cup walnut, chopped (I'd add more chocolate chips if you do not include pecans) (optional)
or pecan

Directions

1.
In a large bowl, cream together butter and shortening; gradually mix in sugars, creaming thoroughly.

Beat in eggs and vanilla.
3.
Combine flour, baking soda and salt; blend into creamed mixture. Stir in chocolate chips and nuts.
4.
Chill for a few minutes or let stand at cool room temperature for 30 minutes.
5.
Drop by rounded teaspoonfuls onto lightly greased baking sheets.
6.
Flatten slightly and smooth edges to make 1/2-inch thick cookie.
7.
Bake in a 375°F oven for 8-9 minutes or until golden brown around the edges and still slightly under-baked in the center. Let stand on baking sheet for 5 minutes; remove to racks to let cool completely.
