soft and chewy chocolate peanut butter cookies

So I have not posted anything in a long time. Sorry about that. I made these for a lunch that we had at work. It was very very easy to make. This recipe came from kraftfoods.com

Prep Time:
10 min
Total Time:
18 min
Makes:
22 servings, two cookies each
1 pkg. (2-layer size) devil's food cake mix
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/2 cup peanut butter
2 eggs

PREHEAT oven to 375ºF. Place ingredients in large bowl. Beat with electric mixer on low speed 1 min., then beat on medium speed 1 min. or until mixture pulls away from side of bowl and forms soft dough.

SHAPE into 44 (1-inch) balls. Place, 2 inches apart, on baking sheets. Flatten each ball, in criss-cross pattern, with tines of fork dipped in sugar.

BAKE 7 to 8 min. or just until edges of cookies are set. (Do not overbake.) Cool on baking sheet 2 min. Remove to wire racks; cool completely.
Kraft Kitchens Tips
Note from the Kraft Kitchens
Thank you. We heard your feedback and retested the recipe. Based upon our results, we added another egg to soften the dough and make it easier to blend together.
Jazz It Up
Add 1/2 cup chopped PLANTERS COCKTAIL Peanuts to dough before shaping into balls and baking as directed.
Frozen Nutty Buddies
For each frozen sandwich, spread 1 cookie with 1 Tbsp. thawed COOL WHIP Whipped Topping; cover with second cookie. Roll edge in chopped PLANTERS COCKTAIL Peanuts. Place in airtight container. Freeze up to 3 months. Serve frozen.

Maple Baked Apple Chicken

I made this tonight and we had a friend over. It was great, and really easy to make. The apples set it off just right. mm mm... definitely going to make this again.
Total time 40 min
Serving 4

4 small boneless skinless chicken breast halves (1 lb)
1/2 cup sliced onions (I used red)
2 red cooking apples, sliced
1/2 cup maple-flavored or pancake syrup
1/3 cup zesty Italian dressing

Preheat oven to 350 degrees. Spray large oven proof nonstick skillet with cooking spray. Heat on medium-high heat. Add chicken; cook 3 min. on each side or until lightly browned on both sides. Remove from heat.
Place onions on top of chicken, surround with apple slices. Mix syrup and dressing; poor over chicken.
Bake 20 to 25 min or until chicken is cooked through. Spoon the rest of the syrup mixture in skillet over chicken just before serving.

Hint: If you don't have an oven proof skillet, simply cover the handle of your regular skillet with several layers of foil before using as directed.

Wasp Nest Cake (or I cut them into bars)

Simple and very easy!

1 (3 ounce) box cook-and-serve vanilla pudding mix
2 cups milk
1 yellow cake mix
1 (12 ounce) package butterscotch chips

1. On the stovetop, mix pudding with milk and bring to a boil.
2. Dump in box of cake mix.
3. Stir and pour into a greased 9x13-inch pan.
4. Sprinkle on butterscotch morsels.
5. Bake in 350° oven for 30 minutes.
6. Let cool; serve.

Sorry I forgot to take a picture of it. Next time I make it I will and try to remember to post it. Have a great day!

bringing back some favorites

I am bringing over some of my favorite recipies I have made that are on my other blog. For now they are repeats. New ones coming soon (very soon)!

This is a really good recipe. I got a lot of complements on it.
yummy
INGREDIENTS:

* 1 fudge or chocolate cake mix
* 4 eggs, divided
* 1 stick (4 ounces) butter, melted
* 1 (8 oz.) package cream cheese, room temperature
* 2 3/4 cups confectioners sugar
* 1 tsp. vanilla
* 8 to 12 chocolate sandwich cookies, coarsely crumbled

PREPARATION:
Mix cake mix with 1 egg and butter; press into greased and floured 13- x 9-inch pan.

In a mixing bowl with an electric hand-held mixer, beat confectioners' sugar with cream cheese, vanilla and 3 eggs until smooth. Pour about 2/3 of the topping mixture onto the cake mixture; sprinkle with crumbled cookies (or chocolate chips) then pour remaining mixture evenly over crumbs. Bake in a preheated 325° oven for about 50 to 60 minutes, (mine only took about 35 minutes) so watch it, or until topping is lightly browned.
Cool thoroughly and cut into bars. Keep refrigerated.

branching out

So I decided to branch out a little in the blog world. I was getting a little overwhelmed with having my crafting blog and food all in one. Well now I have a separate cooking blog. We will see how this works. If not to well then I will go back. But hey lets see.
